They were for sure to big to be to be tasty if that makes since and as much as I hate 1,000 island they needed something for dipping. But they were good enough to deserve some more experimentation.

I'm bringing my dutch oven and I got some new peanut oil so we'll set it up on the Coleman and whoever has something to fry they can just use it.

They make ice cream scoops in several different sizes also.
A half twist and a squeeze and out they pop !

In some regions Rubens are served with Russian dressing as a dipping sauce.

To zing it up a bit I would try a touch of pure horse radish or perhaps a tiny splash of cocktail sauce mixed in the russian dressing.

This recipe sounds like way to much work but the idea
of the melted swiss cheese shreds in the dip sounds yummy !



Reuben Dip
By Emily Richards

1/2 cup mayonnaise
1/2 cup 1000 Island (Russian) Dressing
4 oz thinly sliced corned beef, chopped finely
1/3 cup sauerkraut
1 small clove of garlic, peeled and minced
1 cup shredded Swiss cheese
1 loaf of rye bread, cubed

In a sauce pan combine mayonnaise, dressing, corned beef, sauerkraut, and garlic. Place over medium low heat. Stir in the Swiss cheese. Cook, stirring occasionally for about 10 minutes or until the cheese has melted and the dip is hot.

Serve with bread.

Note: if you have a small fondue pot, use it to serve the dip - keeping the flame low.

I had a thought about spicy brown mustard and some mayo.....

Here is someone elses twist without the 1000 island.

Reuben Dip
Adapted from Family Circle Magazine

1/2 pound diced corned beef
1 package (8 ounces) cream cheese, softened
1 cup shredded Swiss cheese
1 cup sauerkraut, drained well.
1/2 cup sour cream
1 tablespoon ketchup
1 tablespoon spicy brown mustard
Cocktail Rye Bread

In a medium bowl, combine corned beef, cream cheese, Swiss cheese, sauerkraut, sour cream, ketchup and mustard. Spoon into a greased, 1-quart baking dish.

Bake at 350 degrees for 30 minutes, until hot and bubbly. Serve warm with rye bread.
Maybe just pack all this in the center of your creation and the dip is in the middle :thinking:

I'm rolling early, early, Sat A.M. also.

I am at work now actually finishing up a few last minute improvments.

Like a real locking door latch to replace a nail holding the door shut :lol:

I have attended the Scott Thurston school of trailer maintainance.
OUR MOTTO
"No sense doing any necessary work until ya really need it" ( read "the last minute" ). :D

Had a bearing with a little play in it so I pulled and repacked it.

Repaced my non functioning license plate light and caulked the door and window trim. Had a tiny wet spot at the door I am certain it was from the uncaulked window.

I am food shoppin mid week and I will be ready :thumbsup:

Headed home to boil up a big batch of Apple pie this evening. I am gonna serve it hot like last year (and virgin) so bring the frost bite preventer of your choice to add if prefered.

P.S. The apple pie is damn good straight up without the extra bracer !

We were looking at two cul de sacs on the left as you pull in !

They are well protected from the wind and are high and dry unlike the ones out on the prarie.

we talked about 30 - 38 they are within walking distance of the pit toilet and I think the only water that will be available will be where the map shows " DS " for dump station. I saw a frost free faucet there whether it is running or shut off for the season remains to be seen.

The other circle is the 157 thru 174 loop also well protected from the wind and pads are all high and dry. There is a pit toilet in the next lane but accessable by the roadway only ( unless ya bring a machette )

First one to show just make a choice and we will join in!

Since I will have the firewood I will try and escape work early Friday and zoom on down. No promises !

They have the dumpsters pulled for the season so any trash in, is trash out except what we can burn in the fire pit.

Camp fee has been mentioned but it bears repeating , it is $11.22 a night and change is hard to find so it is best if you come with correct change!

I know the rangers really appreciate it.

There is no gate fee for our visitors at the camp ground gate. There IS a fee at the main gate so LOOK for the CAMPGROUND sign as it is about 1/4 mile on West of the main gate off of S.R. 47

Any visitors who really want to stop by and decide to stay could be accomidated at the Turkey Run Inn overnight. It is a beautiful hotel style inn and yes you have a wonderful indoor swimming pool also :thumbsup:

Looks like we are gonna have good driving conditions
and moderate temps.

From the looks of the interest, we are gonna also have
a great turn out. Be sure and bring your cameras so
we can freek out the fair weather campers on the forum.

I will have a hugh batch of White Chili to share Saturday
during the day. I intend to make a large batch of Au
Gratin Potatoes for the main dinner.

The Sat evening dinner is usually our "pitch in" so join
us if you wish. Scott has said he is setting up his deep
fryer for any one who wants to use it so I am doing
some deep fried pepperoncinis :twisted:

I have not put a menu together yet, but will have a deep fryer. I will have quite a bit of firewood also. 2 canopies with sides. Maybe a little antifreeze!

I've kicked around the idea of showing up Friday, but that'd mean getting out of work early and having everything ready Thursday night, as well as making sure Jennifer can get out early. If not, we'll be there early Saturday morning. We've got some eagles to watch along Sugar Creek! :thumbsup: :thumbsup:

Do we have a head count going yet?

I was planning on early Saturday but my wifes wonderful job is making every one work Saturday which puts a crimp in the plans with the boys so I'm trying to work out shipping them out Friday night to my brothers

We will be there Saturday afternoon. No camper yet, we will be staying at the Inn. I will be armed with my camera so I can take plenty of pics and get some ideas.
