Mmm! I was hoping for another dessert! If for some reason the breakfast cornbread attempt doesn't work, no worries--there will be puhlenty (!!) of food!

Note to those adding in now: Since Verna is not able to come she is not able to bring orange juice. It would be nice if somebody would bring that.

Hm. I think I had suggested a gallon to Verna. It's hard to judge! There's a different kind of juice coming, too.

Updated:

Three events: a Friday evening wine/beer and cheese/snack party (5:30 or whenever Gary can sneak us into the shelter) a Saturday breakfast (9:00 a.m.), and a Saturday night potluck (6:00 p.m.). I will try to compile as we go and make sure that an updated list appears on each subsequent page. :

Friday wine/cheese: This one doesn't need much organization--bring a beverage and a snack, no need to commit to something specific.
Pat and Mark--Bob Henry's Apple Pie (hot beverage with optional alcohol)

Saturday breakfast (Please just bring one thing--we always have way too much food):
Coffee, creamer, sugar (I'll bring the coffee urn)--Doug and Nan
Orange Juice--Urban camo

For breakfast I will bring sweet rolls in a waffle iron.
For supper I will bring baked potato soup
I also will have a vast quantity of home brew and some (my first attempt) raspberry wine.

We have some family joining us too. Not sure what they are bringing. Diane has some home made yogurt for breakfast and home made pickles for dinner as well as chocolate eclair torte. Maybe a couple bottles of wine. See you Fri. afternoon.

Wild Rice Casserole recipe (requested by gdpipkorn)

(before I forget, my husband is requesting the Reuben recipe--can't remember who brought that)

Wild Rice Casserole
3 6-oz. boxes Uncle Ben’s Original Long Grain and Wild Rice
24 oz. sour cream (you could try it with less)
1 ½ stick butter, softened
2 cans sliced water chestnuts (I cut them in smaller pieces)
3 c. shredded cheese (cheddar or Colby/jack)
¼ c. sliced or slivered almonds, toasted
1/3 c. sliced pimiento olives (optional, but it looks nicer with these)
Prepare rice according to package directions (I omit the butter/oil there). Mix in sour cream, butter, water chestnuts, and cheese. Bake in 13 by 9” pan (it will fit and won’t bubble over, I promise) for 25 min. Add almonds and bake for 10 more minutes.
Or, bake in dutch oven (I used a 12”) with 1 ring of coals under and 1 ½ on top, turning the top clockwise every 10 min, and the bottom counterclockwise.

I was asked for the recipes for the Salad and the Spread, we brought, here they are.

BEEF JERKY SPREAD
6oz. Beef Jerky
2-8oz. pkg. Cream Cheese- Softened
2-3 tsp. Red Wine Vinegar
3-4 Green Onions - Minced
2/3 cup Mayo
Using a sharp knife, cut the jerky into
tiny bits, or process in batches till you have
1/8" pcs., fold all the ingredients together
with a rubber spatula, till well combined.
You can add: Fresh Ground Blk. Pepper,
&/or Teriyaki Sauce to taste (as I did).
Refrigerate a few hours for the flavors
to meld, remove from fridge 1/2 hr.
before serving with crackers.

Here is the salad recipe:

BROCCOLI SALAD
Dressing:
1 cup Mayo
1/4 cup honey
2 Tbl. Red Wine Vinegar

Salad:
4-5 cups Broccoli florets, chopped small
2-3 Green Onions, sliced thin
1/2 cup Red Onion, chopped
1/2 cup Raisins
1/2 cup Bacon Bits
1 cup Dry Roasted Sunflower Seeds

Mix-up the dressing ingredients, set aside in the fridge.
Combine the Salad ingredients in a large bowl, refrigerate.
About an Hour before serving, Combine the dressing and
salad till well coated. Serve Chilled
( I Doubled the recipe for the amount I served )
This is just a guide, add more or less stuff to your taste.

Bob it was "Jacks Special Salsa" found in the cooler in the veggie section of the Pick N Save in Sheboygan. It's my go-to salsa for the masses.
