Okay then, we are cookin.'

I will cure and smoke some tasso, like I did last year, but I will cure and smoke more of it. I will also hide it until it it is needed, so people don't eat it up before it is needed. I think Eddie dumped it into the gumbo before he wanted to, because people were scavenging. LCG folks need to wait until the gumbo is done -- no eating the ingredients.

We cooked the gumbo at our site last year because of the rain and I had a FirstUp........ you guys are more than welcome to cook on our site again, if you want.... #46!!!!!

Thanks for the cover. If things work out the way I hope they will, I'll bring a 10 X 10 EZup we can also use. I still don't know what I will be driving and sleeping in for LCG. But, I will definitely bring homemade tasso, and will be glad to do some chopping and cooking.

Not to derail the GUMBO thread, but maybe Danny can pick your TD on the way and double-tow down there and drop you in yer spot! He's good like that I hear. Just trying to think outside the box... PM amongst yourselves!

3.5 pounds of tasso is cured, smoked and diced for the gumbo. It is vacuum sealed and in the freezer. :thumbsup:

Nice! I still need to try making some myself.

Looking at the list, seems we just about have everything about covered, just a couple things short.

Green onions and 5# of smoked sausage.

We are looking forward to the gathering.
