EXCELLENT!
It got me thinking about getting into that, although I've been resisting.
So if it's a 12" oven, you put 15 coals on top, and 9 on the bottom? And what do you do, burn coals elsewhere and place them as needed?

That's it. You use a Chimney Starter, then use as many coals as you need.

Chimney starters are for wooooosies use this
3000 degree Propane torch from harbor freight will start 50 lbs of briquets in 4 minutes and wake up the neighbors

I put my chimney starter on top of a my turkey fryer burner. I dump the coals into my BBQ pit and pick out the coals I need with a pair of tongs.
I have that same Weber chimney starter and I like it better than any of th other ones I've used. The body is better but the grill on the bottom is coming out.
