Which Crab Has More Flavor?

Postby Todah Tear » Wed Dec 23, 2009 3:00 pm

I got a killer deal on some King crab at Thom Thumbs last week. No, it was not the sweet price that Dean got on his "fresh" crab (referring to his thread about the chowder recipe). Anyway, the check-out clerk said that she preferred Alaskan Snow crab because it had more flavor. That got me to thinking because I've noticed that a lot of people eat Dungeness crab. Maybe it has more flavor. I don't touch it because it is little and would require a lot of work to pick the meat out.

Answer the poll and let the world know which one you think has more flavor. If there is one that you think needs to be listed, PM me.

Here in Puget Sound and Hoods Canal we have several species, but only the Dungeness is commercially harvested. The Red Rock is smaller, but better flavor. We can get Both King and Snow crab from Alaska, but the delay between harvest and purchase seems to degrade the quality and flavor. Nothing finer than crab cooked right on the beach.

We prefer Dungeness, King and Tanner crab in that order based on both taste and consistency. We typically catch our own, except the King sport fishery has been closed in these parts the last couple years so we by fresh at the commercial dock when we want a King.
