Jambalaya my way.

This can be made in a large pot on your stove or a DO.

Ingredients
1 stick of butter
2 cups frozen mixed vegetables
2 cups chopped green onions
2 cups chopped yellow or white onions
1 large green bell pepper, seeded and chopped
2 cups chopped celery
1 Tbs minced garlic
1 pound pkg of Andoui sausage sliced
1 14.5 ounce can diced tomatoes
1 14.5 ounce can chicken broth
1 Tbs Mrs Dash herb seasoning
1 tsp cayenne
2 8oz pkgs of Zatarain's New Orleans Jambalaya rice, regular or with cheese
4½ cups of water



In a large pot melt the butter over low heat. Add the onions, bell peppers, celery and garlic. Sauté for about 5 or 10 minutes.
Add the Andoui sausage, water, tomatoes, chicken broth, Mrs Dash, cayenne, and the rice. Bring to a low boil, cover and reduce the heat to simmer for about 30 minutes. Stir the pot half way through the cooking time.

If you feel like going to hog heaven, put in some pulled pork.

Add some Fritos to your bowl of Jambalaya for a little extra flavor.
