I have tried many.....found this one to be the best. I do this in a 10" cast iron fry pan when ever possible. Oil up the pan and preheat it. Then put the batter in and cook till the toothpick comes out clean......Toothpick method is much more reliable then cooking times.

1 Cup butter , melted
1 cup white sugar
4 large eggs
1 15oz cream style corn
1 4oz Green chilies well drained
1/2 cup shredded Monterey Jack cheese
1/2 cup shredded Cheddar
1 cup all purpose white flour
1 cup yellow corn meal
4 tsp Baking powder
1/4 tsp salt

Preheat Oven to 300 degrees and grease a 9X13 Baking dish

Mix in a large bowl all ingredients till all the lumps disappear .Bake for i hour or till a toothpick comes out clean

That sounds mighty good Woodbutcher! ............... I may have to try that in my Traeger this week. :thumbsup:

I made this on my Traeger twice and turned out great. Let me know what you think. I'm a big fan of corn bread and have made lots of varieties, and find this the best.
