Our goto for the morning is affectionately known as 'left over mash potato pancakes'
Mash Potato, cheddar cheese, crème cheese, egg, pepper, bell pepper, onion powder, baking powder and a CI pan.

Make everything the night before - exclude the egg, put in a ziplock bag and throw into the cooler. In the morning, add egg, squish around to mix, cut the corner off the bag and squeeze into the pan. Have mixed it up with chives, crumbed bacon, hot peppers - anything left in the cooler on the last morning before heading home.

And my smoked breakfast quiche if there are people around to help eat it - feeds 8 to 10

Favorite is dutch oven french toast. I haven't tried the version with peaches and cream cheese but suspect that is also very good.

I'm not Bill, but here is the one the wife and I make. We make in our Dutch Oven using same amount of charcoal we do for our peach cobbler. Go by smell when cooking. We've adapted several recipes to our DO, some with great results and some not so much, bull all edible. This turned out good.

After rereading, I thought Bill said Peaches and Cream. My bad. This one does NOT have cream cheese. It would be very easy to adapt though. Sorry about the confusion.

You can kind of make it up. I have tired both sliced and torn up bread, and prefer the torn up bread of a crusty sort. A lot of recipes say put in the dutch oven the night before but times I've made it the night has been warm and I didn't think warm eggs and milk sitting around in a pot in warm weather sounded good. Mostly just plain (no peaches) and have made it once with cubed ham.

Just google dutch oven french toast - lost of hits.

Pie iron breakfast pies. Cooked breakfast meat and an egg between slices of wheat bread in a pie iron. Few fresh herbs are an added bonus.
Some day I will figure out something to put here. But for now....

I have a 4" X 5" cast iron fry pan that holds 2 fired eggs. I get the perfect ratio of egg to toast. When the eggs are done I put a piece of cheese on till it melts and slide them between 2 pieces of toast. Simple and quick.

I can't help but recall eggs in a nest, a foil pack breakfast. A fresh sausage patty on the foil, gate a potato and make a best, crack an egg in it, lay a piece of cheese on top, and seal up the foil. 15 to 20 minutes then flip for 5. Just fun and quick get away.

I make this on a white gas grill, not a campfire, but I reckon it would work fine either way. Being a guy, I prefer having just a few dirty dishes/pans, so I'll pan fry those hash browns that come in a little milk carton, shove them to the side, and fill the rest of the pan with scrambled egg mess with pre-cooked sausage, onions, and maybe some diced celery. If there's AC power, I can fire up a big percolator the likes of which lots of younger folks have never even seen :D

About 12 scrambled eggs a generous portion of bacon, ham, or even pepperoni and bury it is shredded cheeses bake in the dutch oven till dry and firm. Oh darn near forgot the onions and mushrooms ! :oops:

I usually do that first one bobhenry with a pile of hash browns under it all. Tried it once with stuffing mix under all - very good.

This thread is going to ruin my weight loss plan.
