So what is better? Aluminum.... or stainless steel? Pros and cons? what's your preference?

Stainless steel, no rust, easy to work with, strong, doesn't scratch like aluminum

The aluminum will also wear on the pin making a black slurry of rouge like silt that can cause staining over time.

Stainless steel is best.
