I've been day dreaming of a design about that size. If you can manage to have the bed go sideways (at about 70 to 72 inches long vs 80 normally), then you have about 20 inches between the bed for the galley. That leaves about 40 inches between the bed and the front. What I had planned was to put a wall/ screen between the bed and this space, and just have 1 door. This provides a small entry area. It can have a small cabinet to house a porta potty, and give you a place to carry chairs and awnings and stuff, or just a place to take off your shoes or hang jackets. If you raise the roof 6 inches or so, then you can also raise the bed 6 inches, and store a water tank, etc under the bed.
