Today I got all of the interior paneling put back in, as well as ceiling panels. What a pain in the keister that was. I was unable to get pictures because I finished so late and it was already dark out. I will get some pictures and post them tomorrow.

Got two coats on the walls and one on the ceiling today...

I highly recommend If you can, paint the ceiling panels before putting them up.

Highly agree...I did, including staining the sides before installing them.

Mark, one recommendation I can make is that if you have not done so already, is that one gets a ton of info by reading as many of the posts in the forum, espcially looking at the many photos as he/she can. The post show ideas and hints that are can be stored in memory for future projects. This can be very time consuming and laborious I know, but definitely worth it.

Sealed the floor and put the carpet on the walls today. She is starting to look nice.

Wow! What a difference the carpet makes. That is a sharp look.
I am doing a similar wall treatment, but the carpet will run floor to ceiling in the cargo area 6ft x 8ft in a Granite blue color and I chose Taupe for the ceiling to lighten it up some, and because its right at eye level. Painting the stock plywood walls wouldn't help much, its just junk that is seamed everywhere. I almost threw it away until I saw a post about carpet walls. I have to attach it to something and the carpet will hide a multitude of sins.
You're really making great progress. Thanks for the pics and for keeping us updated.

Yes it is the plywood that came in the trailer. I used 3M contact glue and staples across the the top. The glue works very well. I use to use the same glue for covering custom speaker boxes with carpet.

Which do you prefer and why (leveling jacks vs stabilizing jacks)?

I have stablizer jacks on mine and I wish I had scissor jacks. Why - find the stabilizer jacks a little fussy to deal with to get the right position. But I believe the scissor jacks are infinitely more adjustable. When I get all my other projects with this trailer, I will look into replacing them with scissor jacks on all four corners.

Mine came with rear stabilizers. I carry an old scissor car jack & jack stands with me. I've never used the style in the link.
