The Baked Potato Casserole Recipe

Postby stbuch » Thu Nov 27, 2008 10:46 pm

Much requested, here it is. I'm not a measurer when I cook but this is basically what you'll need to make a 9x13 dish.

6-8 Potatoes (I choose Yukon Gold)
4 green onions chopped
6 slices bacon cooked and chopped
one stick butter
one 16 oz tub of sour cream
2 cups shredded sharp cheddar cheese

I wash the taters and cook them in the microwave. Then I cut them in cubes with the skins still on. Put in a large bowl and put in the butter while they are still hot, stir. Add the onions, bacon, and sour cream and stir. Put half the mixture in the pan then add a layer of shredded cheese.
Put the rest of the mixture on top of that and top with the rest of the cheese. Bake at 350F until bubbly. Yum!
:ok:

Thank you Sherrie. I will be making that delicious casserole for our Sunday Steeler Football Game. We gather at a friends camp every week to watch the game and everyone brings a dish for halftime. This is going to be a hit.
Bacon Potato and cheese everything men love.
Thanks a million!

Sherrie: :)

Steve Tripp here:

Question for you:
I like your recipe below, and would like to move it to the recipe section of
the forum instead of the off topic part of the forum
? Would that be ok with you? :thinking:
***&***

Now for a talk of your nice recipe.

I too have had a recipe from Sam The Cooking Guy that I get rave reviews
with my buds when camping. (See below for the basic BLT dip.)

I can make the basic dip without the tomato and lettuce and use it for dip
but also use it on baked potatoes while out in the wilds or as I like to say a
"Two fur". IC the difference between my man pleasing dip and yours is that
you add the sharp cheese and I would add garlic, Worcestershire and a
little mayonnaise.

So my last trip we baked the potatoes in tinfoil and then dolloped the dip
with sharp cheese and snipped green onions on top of the potatoes. But we
also had the dip to have with chips with drinks as well. "A two fur"

For me the garlic adds a nice step uP for the dip as well as the potatoes.

This dip described below less the tomato and lettuce is my basic potato
dollop recipe with the adding of sharp cheese and green onion. I will be
putting this mixture into your casserole in the future.

Sam the Cooking Guy's recipe

Makes 2 cups

All your favorites - in a dip. And the best part is that it's served in 'L' like a bowl. Save some bacon for the top.
Ingredients

* 1 1/2 cups sour cream
* 1/2 cup mayonnaise
* 1 teaspoon worcestershire
* 10 slices bacon, cooked, crispy & crumbled
* 3 cloves garlic, minced
* 1 tomato, cored - seeded & diced
* 1 head lettuce

Steps

1. Mix all ingredients except tomato & lettuce - this can be made in advance and put in the refrigerator - save a little bacon for the top
2. When you're ready to serve it, cut 1/3 off the top of the head of lettuce, and scoop out insides - you're making a bowl
3. Add dip to lettuce bowl and top with diced tomato and bacon :thinking:

Again the garlic, Worcestershire and a little mayonnaise do add just a bit
more flavor
that seems to enhance the potatoes or dip for people I
have shared with. You should like garlic as that flavor will work hand and
hand with the bacon to march on your taste buds.
