pancake - waffles

Pancake/Waffle Mix (Tina & Jerry Libberton)

1 cup Bisquick
1/2 cup Oatmeal
1/2 cup Flax seed meal
1 whole egg
1 egg whites (additional protein)
2 Tbsp Vanilla (optional)
1 cups Milk
½ cup water, more as needed
(for waffles - add 1 1/2 Tbsp Oil)

Mix dry ingredients in the bowl, then add liquid ingredients. Stir up and let sit to soak up the liquids. If it is too thick, add more milk or water.

Add in chopped walnuts or banana slices.

The flax seed will make them brown up quickly, so they will be a really dark brown, rather than the light golden color you get with regular pancake batter.

**I usually pre-mix dry ingredients to have on hand when camping.

This is one we always enjoy wether on the road or at home.

cheesy corn waffles

This is a adaptation of Joanie and Deans Smokey cheddar waffles.

Cook in a cast iron waffle maker of course!

1 small box Jiffy cornbread mix.
Mix according to recipe on the side for waffles, EXCEPT
replace milk with buttermilk
add @ 1/2 cup diced ham (more if desired)
one handful of shredded cheddar cheese.

Makes 4-5 waffles

These are the only waffles that don't cause my me to have blood sugar spikes and have good satiety value, hold you full along time.

I prefer the Jiffy mix, as they are just a little sweet and the size is perfect for just the two of us. (usually with one left over to share)

Everyone I have made them for loves them!
