Cornbread: Sweet or Not Sweet

Postby asianflava » Mon Oct 02, 2006 12:24 am

I got into a discussion about this with one of my co-workers. He absolutely hates sweet cornbread. He can tolerate the slightly (very slightly) sweet ones but absolutely hates the sweet ones. He likens it to a muffin. I kinda like the sweet ones, like the ones Boston Market has/had. I haven't been there in a long time so I don't know if they still have them.

So, which one do you prefer, sweet or unsweet?

I like cornbread a little sweet with whole corn mixed in and Jalapeno pepper
pieces through out. So as to have the sweet yet hOt for the taste buds. Also
I like to put a little red sweet pepper in the mix so to have the Yellow, red
and green for an appealing look when you break open or cut the cornbread.

I have been known to use butter liberally and some honey too.

Definitely a little sweet, even with the corn in it is good. Don't get it much around here tho. Nobody seems to make it any more.

Corn bread is very easy to make. I'm not a baker, but even I can make it. It's simplicity makes it perfect for cooking in a Dutch Oven when camping. Hot corn bread and a pot of chilie would make a great camping meal. If you like spicy food, look up a recipe for Mexican Corn Bread. (You knew I'd work this into a post about Dutch Ovens didn't you?)

Definately not sweet...but I do occasionally eat it with a little sorgum.
Last time I was down south, I put 10 lbs of self rising cornmeal, 4 pints of sorgum, and a country ham in my suitcase to bring back to Alaska (can't get the right ingredients here). When I arrived home in Juneau, I saw that TSA had searched my bag. They had slit open one of the bags of cornmeal, and opened one of the pints of surgum...evidently to check them out. I gotta tell you, that suitcase was a mess by the time it got here!!!

CORNBREAD

Postby CPASPARKS » Mon Oct 02, 2006 12:34 pm

You must be a hillbilly like me. My family for generations have eaten cornbread with milk/buttermilk.

Must be a East Texas thing. My family was in East Texas since the 1850's.

Just a little sweet like me !! :R

I haven't attempted DO cooking yet, but could you use a mix like Jiffy Cornbread Mix , add the egg and oil and cook that in a DO?
Some things are way over my head !! ...but it keeps me looking UP!

A trick my wife does is to add a table spoon of sour cream, make it less
crumbly and more moist.

For me...I like a nice crisp crust on my cornbread. I have several cast iron pans that I don't even let my wife touch (my dad, Pap, gave them to me before he died, bless his heart)...two for those ones that look like little corn ears (for sticks) and one that does the wedges. They are extremely well seasoned...just greese them up, put them in a hot oven to temp, spray a little more PAM in them (if you are feeling paranoid), pour the batter in, and listen for the sizzle. In 20 minutes or so...you got heaven!!!
