Shut up and Eat it

Postby VT800C » Fri May 19, 2017 9:49 am

I did a lot of 'venture' hiking with the Boy Scouts. The main requirements were the food had to be light; (we were carrying everything in our back packs) easy to make; (a kid could do it) and something they'd eat! This was one we came up with for a breakfast. it's hot filling and sticks to your rubs through a morning of hiking. It's a 'one pot' so adjust servings accordingly.

Instant mashed potato flakes (get the ones that use water only, it's easier to carry)
Sliced Pepperoni
Shredded cheddar cheese

Put desired quantities in a coffee cup.
add hot water and stir (If too thin, add more flakes if to thick, add more water)

eat

It got it's name from my sister, who's kids were fussy eaters, and would always ask: "What's this?". I got the same questions on the trail with the Scouts.

Another variant of this is called Cheesy BacoSpuds. Ate it when hiking the Appalachian Trail many moons ago, often at a late afternoon rest stop to get me to camp & dinner.

Per serving as best I can remember:
pinch salt
1/2 cup (maybe) of mashed potato flakes
1 cup boiling water
1-2 tblspoons of pre-cooked bacon bits (or Bacos)
grated or chopped up cheddar cheese
(opt) 1-2 tblspoons grated parm cheese

Add water to salt & flakes, stir, add bacon & cheese(s) and stir until combined

Thanks for the recipe. It has been added to the next edition of the forum cookbook, which I am currently working my tail off on. The old book was 93 pages, the new one is currently at 280 pages and expanding every day. I hope to get it out by the end of May.

The epub sounds good. Should save me quite a bit of paper!
