LCG Gumbo Cook Thread

Postby caseydog » Thu Sep 12, 2013 10:56 pm

I do not see a cook thread yet. I would actually enjoy smoking up some Tasso for the Friday gumbo, should it be desired. Who is the gumbo-master this year?

The clock is ticking, we need to have a recipe, and volunteers. Tasso is already taken.

Not willing to take responsibility for cooking, but if someone will post up the ingredient list, I'll be sure to bring something for the pot :D

I would hate to sign another person up for the job, however the "Chef" from last year did a great job!

Here's the list from last year. Perhaps the Chef can edit as he or she sees fit. But it gives a place to start

15#s boneless, skinless chicken breasts Nobody 5#s, Starleen2 5#s, Thomas 5#s

15#s smoked sausage...various brands are OK, a Cajun version would be better - Planovet 5#s, Jeff & Micki 5#s, Casydog 5#s

3#s of tasso = Caseydog

10#s of chopped (fresh/frozen) Okra...or comb of the two Kenny and Julie

10-15#s of white or yellow onions - 48Rob

4-6 LARGE green bell peppers Sonetpro

2-3 bunches of celery Sonetpro

32 oz jar of chopped garlic - Loader

10-12 bunches of green onions- Loader

10#s long grain rice - Pam and Bob

Roux (in a jar) any brand will work but the Chef told me Zatarains is preferred. MadJack

Tabasco - Loader

...please pick a portion of the ingredients to bring and post it here so we know who is bringing what and PLEASE chop/cube all ingredients beforehand and have them ready and at the party site (#38) early afternoon on Fri.

As Jack taught me many years ago, one can't list the ingredients for a gumbo without letting out a loud "AAIIIEEEEEE!!!"

I will bring the 30 cup rice cooker and the rice. I can assist in making the gumbo if needed. I do not make the best but I have made it a time or two.

We'll do the 15 pounds of white/yellow onions.

Eddie did a great job last year! I'd be glad to help him out again this year. (Help is really code for watch, shoot the breeze, and drink a cold beer!)

Never fear a coonass is here! (or is that HAVE FEAR a coonass is hear?) anyway! I'll do the cooking and bring all the gear to do the cooking if y'all want. Y'all just supply the fixins and I'll put it in a pot.

Please remember to have your ingredients at the cook site by 3:30 pm Friday.

Also Please have the stuff already copped up. Just makes things a lot more fun.
