I guess it all depends on the complexity of your build, what features you want to include, and how "finished" you want the end product to be. I can tell you that on my build I wished that I had spent a little more time earlier, and allowed a little more pull space for my wire routing. I have a fairly simple system with mostly just a good compliment of LED lighting and a couple of fans, but they are all on separate circuits; so it adds up to quite a bundle of wiring.
If you do decided to route thru the ceiling (or even the floor) make sure you drill your pass thru holes before skinning, otherwise, even with a 90 deg drill, it may be hard to drill the holes straight thru.
I used surface mount wire organizers/chases along the baseboards of my walls (tucked down beside the mattress) so that I can have better access for maintenance and/or modifications, but still ran some wires thru the roof and bulkhead.
The worst thing you can do, IMO, is to get in such a hurry that you make more work, or worse, rework for yourself because you got in a hurry. Just speaking plainly here with no malice intended: If that kind of thing doesn't bother you and your build is going to be pretty simple, then no big deal. Some people can organize a simple build in their head well enough and crank one out in no time. Me, I have to plan and sort out details before I start otherwise I can't get there. Just saying.
