Pineapple and cheese casserole? Check this out:

Postby Ira » Thu Dec 21, 2006 2:44 pm

I haven't tried to do this yet, but look at this recipe that I pulled from a barbecue site that I go to.

It sounds like the craziest thing you ever heard of, but doesn't it ALSO sound really interesting? Plus easy?

It's like a side thing:

"This sounds good and tastes better!! We serve it as a side, but it is a little sweet."

1 cup sugar
6tablespoons of all purpose flour
2 cups of shreaded cheddar cheese (sharp for me)
2 20 oz. cans of pineapple chunks
1 cup of crushed cracker crumbs
1 stick of butter

Mix flour and sugar, then add in the cheese. Stir in drained pineapple, saving the juice. Spread mixture into a buttered casserole dish. Mix cracker crumbs with melted butter and enough of the pineapple juice to bind it together. Spread mixture on top and bake in a preheated oven for about 30 mins.
Here we go again!

Canadian Bacon & Pineapple Pizza recipe

This recipe reminds me of one of those pineapple, Canadian bacon pizzas.

Guess if you were one that liked that type of pizza a little ham or Canadian
bacon could get close to the same flavor.

I think the crust and the salt of the cheese and bacon with the sweetness of
the pineapple makes that pizza.

Will look forward to seeing if others enjoy your recipe.

Weird, I was looking at just that recipe today. Found it in a stack of cards. Mine called for Ritz Crackers

Passed it up and crock potted

6 chicken breasts
1 cup fresh cranberries
1 granny smith apple
3/4 cup unsweetend apple juice
1 T brown sugar

6-8 hours on low.

Then baked a loaf of fresh white bread and a loaf of fresh wheat bread.
Then used the leftover cranberries and made a loaf of Cranberry sweet bread.

Guess what's for supper tonight. Uhh bread, butter and honey maybe??

Here's a slightly different version,
http://allrecipes.com/Recipe/Pineapple- ... etail.aspx

INGREDIENTS
3 (15 ounce) cans pineapple chunks
2 1/2 cups shredded Cheddar cheese
8 tablespoons pineapple juice
8 tablespoons all-purpose flour
1 cup white sugar
30 buttery round crackers, crushed
1/2 cup butter, sliced
DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C).
In a large bowl combine pineapple chunks, cheese, pineapple juice, flour and sugar. Spoon into a 9x13 inch baking dish. Top with crushed crackers and butter slices.
Bake in preheated oven for 30 minutes.

Oh--sorry about the temp thing. I haven't come back to this thread since I posted it.

Whatever I pasted from that recipe is what I pasted, so 350 is probably right.

I still haven't tried it, but it looks so easy and interesting that I really want to. But after honey ham last night, and mussles today, gonna wait.

Made this tonight. Kind of a weird combination of things. Did not mesh well in my opinion. Never know until you try though.

Mix a 20 oz can crushed pineapple (drained!) with an 8 oz carton of sour cream. Chill thoroughly and pour in graham cracker crust. Serve.
(This is the original "diabetic pie").
